This senior project is an exploration of the evolution of Jewish cuisine from Europe to America. It examines the origins of Jewish cuisine in the European shtetl and how various factors forced Jews to adapt constantly. This paper also explores the emergence of specialty food services such as appetizing stores and delicatessens and how assimilation into the wider American culture has influenced Jewish cuisine.Accessibility Statement
